Krista’s Prophetic Pesto Sauce

written by Head Health Nutter August 21, 2009

Why are we calling this pesto recipe prophetic? Because it’s so good that you’ll be spouting prophesies for an hour after savouring this delicious, lip-smacking, garlic-infused, healthy green Italian sauce!

This sauce is virtually a complete meal between it’s protein, healthy oil and complex carbs. Spread it on a piece of rye bread to enjoy with a salad or use it in a whole wheat pasta dish. Created by my good friend Krista, this recipe will be sure to tantalize taste buds as well as nourish the body.

Serves: 6 Prep Time: Cooking Time:

Ingredients

  • 1/4 cup Almonds
  • 2 stalks fresh Kale, destemmed
  • 3 handfuls of fresh Spinach
  • 1/4 of a medium Onion
  • 5 cloves of Garlic
  • 1 tsp. dried Basil or 1 tbsp. fresh
  • 1/4 cup cold-pressed, extra virgin Olive Oil (or until desired consistency)
  • fresh ground Sea Salt and Pepper (to taste)

Instructions

  1. Chop almonds in blender.
  2. Add the remaining ingredients and blend until smooth

Notes

TIP: Keep sauce in fridge for up to 2 days before consuming. You may find the garlic overwhelming and the sauce too spicy if you use it right away. We found that by letting it marinate in it's own juices, the garlic mellows into a more palatable (and phophetic!) flavour.

Please enjoy and come back to let us know how much you loved this supremely healthy recipe!

I’m salivating too Emmanuel! I had no idea there was so much goodness packed inside such a small jar! And since the “store bought” pesto I have in the fridge is nearly gone… this will be the perfect time to try making my own (!) And then… comparing the two! After I get the fresh ingredients (wow – 5 cloves oughta keep ALL the vampires away!)… I’ll wait 2 days for it to “conflate” (I didn’t even know pesto HAD almonds)… then I’ll let you know if that prophecy oomes true!

In the meantime, I have ONE question for you Stephanie ~ WHO takes all those delish looking pictures of all your incredible edibles? They are SO divine, EVERY time, I can almost TASTE everything with my EYES ~ Yummmmmm! Ciao now. (Ya got me talkin’ Italian!) Grazie!

Hi Steph,

Your recipe enticed me so much that I went out today and bought kale (for the first time in my life) and made a double portion of pesto sauce!

It’s absolutely delicious and I even began to use it today. I don’t fear garlic. I’ve inherited Mom’s love of it!
